Fresh Halibut

West coast Halibut season has opened! Yesterday we received a beautiful whole Halibut, fresh out of the water,direct from Alaska. We cleaned and filleted it and it is ready to go. It doesn't get any fresher than this. Halibut is such a clean tasting fish loaded with healthy omega 3's. It is incredible when cooked on

the grill with olive oil, salt and pepper. Be careful when grilling this fish because it tends to cook pretty fast and be sure to oil your grill grate so this delicate fish doesn't stick. Usually it cooks up after 10 minutes at medium high heat. If you are looking for something a little bit more decadent try it with a little bit of shallot butter on top. Simply chop up some shallots in a food processor and add the butter a little bit at a time. We also love to throw in some fresh herbs, whatever you have on hand. After taking the fish off the grill dollop some of the butter on top. Take it to the next level and try some of our Amish butter.  To complete your dinner pick up some of our fresh asparagus.
